Coconut Bay Adds More All-Inclusive Options in Saint Lucia

The popular Coconut Bay all-inclusive in Saint Lucia has added several new dining options to the property.

The upgrades came to the all-inclusive’s a la carte eateries in September.

“This year during Coconut Bay’s annual September closure we renovated and replaced two of our kitchens,” said Mark Adams, CEO of Coconut Bay Beach Resort & Spa. “These improvements gave us the opportunity to upgrade our menus and add authentic new dishes.”

“We are looking forward to the feedback from our repeat guests as they enjoy all of our physical upgrades and our new menus as they are the inspiration for so many of our continued improvements, and of course we look forward to the feedback of our new guests as well.”

Executive Chef Angelo Konidis has created new menus at the resort’s four à la carte specialty restaurants where guests enjoy fresh island ingredients and unlimited dining. 

A new tandoori clay oven at Silk brings bubbled naan and skewers of meat or seafood roasted at temperatures of 700°F to the table, along with freshly caught sushi and sashimi.

Calabash puts a Latin twist on contemporary Caribbean food, with a tenderloin topped with garden fresh chimichurri, shrimp coated in coconut and raisin chutney on jerk chicken fritters.

Veranda, the new adults-only restaurant, brings together al fresco dining with “grown-up flavors,” beginning with the signature dish of fresh marlin smoked with pimento seeds and hickory wood.

Antigua and Barbuda Courts Chinese Tourism Market

There’s no bigger potential tourism source market for the Caribbean anywhere on earth — China.

And while many destinations have talked about courting tourists from the country, one destination made a measure push this week.

Antigua and Barbuda led a high-level delegation to China this week to be part of China’s International Trade Expo in Shanghai, a major event that drew more than 250,000 visitors over five days at the beginning of this month.

The delegation, led by Antigua and Barbuda Foreign Affairs Minister Chet Greene, also included Colin C. James, CEO of the Antigua and Barbuda Tourism Authority, along with Senior Sustainable Tourism Officer in the Ministry of Tourism Vashti Casimir, Babu Browne of the Ministry of Foreign Affairs and Managing Director of Shell Beach Seafoods Company Ltd Wilbur Edwards.

A key focus of the country’s booth was to raise awareness for the twin-island destination in China; James met with several prospective investors looking to explore travel opportunities for Chinese tourists, who will comprise the globe’s largest group of outbound travelers by 2025.

The Cayman Islands Has a Major New Real Estate Project

There’s a major new real estate project coming to Grand Cayman: and it’s being dubbed the most luxurious development in the history of the Cayman Islands.

This is the new $500 million WaterMark, a collection of 54 beachfront units set on Grand Cayman’s world-famous Seven Mile Beach.

The new project “will be far beyond any other property ever developed in the Cayman Islands and very likely the Caribbean,” listing broker Kim Lund tells Caribbean Journal, pointing to the combination of “cutting-edge design, ultra-premium quality, prestigious amenities and facilities and privacy.”

Indeed, the residences will range from a minimum of 3,900 square feet — with a starting price of $5.6 million — to 11,900 square feet for a penthouse, with the latter starting at $24 million.

That’s a pricing echelon unmatched for a development of this size in the Caribbean.

WaterMark will have a broad range of amenities, including 12 swimming pools; a spa; a fitness studio; a screening room; a library; an oceanfront conservatory with a chef’s kitchen; a fine-dining restaurant and even bespoke concierge service, among other offerings.

While the residences themselves will be right on the beach, several amenities will extend across Grand Cayman’s West Bay Road, including the spa, the eatery and a collection of guest suites for owners.

It’s yet another sign of the Cayman Islands’ growing position as a luxury real estate Mecca in the Caribbean, from its new Residences at Seafire (set at Kimpton’s first-ever Caribbean hotel) to the recently-launched Grand Hyatt Grand Cayman Residences.

Lund, owner-broker at RE/MAX Cayman Islands, told Caribbean Journal that the project is already at 65 percent sold after three months.

Construction is slated to launch in the spring of 2019.

Southwest Begins New Flights to Mexico, Resumes Caribbean Routes

Southwest Airlines has begun new weekend service between Chicago-Midway and Los Cabos-Cabo San Lucas, the carrier announced this week.

The new flights comes as Southwest has resumed a wave of flights to destinations in both the Caribbean and Mexico for the upcoming season.

Belize continues to see rapid growth.

That includes daily flights from Austin to Cancun; Denver to Puerto Vallarta and from Fort Lauderdale to Belize, Grand Cayman and Turks and Caicos.

Southwest has also resumed weekly seasonal service on Saturdays from Nashville, Columbus and Indianapolis to Cancun.
